Kale Apple Salad -RESTART approved

This salad has become a crowd favorite at many summer picnic’s. It is a wonderfully simple recipe to whip out when the garden is loaded with kale (or your local farmer’s market) and you need a quick side dish.

Honestly, every time I make this dish, the ingredient quantities vary slightly. I add to taste. So, if you find you prefer it more cheesy, throw in some extra nutritional yeast flakes! Want more lemon? Go for it!

Ingredients:

Large bunch of Kale

2 Apples (use green apples for RESTART)

2 Tbs. Nutritional Yeast Flakes

3-4 Tbs. Extra Virgin Olive Oil

2 Tbs. Apple Cider Vinegar (w/ mother)

2 Tbs. Lemon Juice

Himalayan Pink Salt

2 tsp. Garlic Minced

1 Tsp. Raw Honey (optional) (omit for RESTART)

Chop the kale and apples, combine in a large salad bowl. In a separate dish, combine olive oil, vinegar, lemon juice, salt garlic and honey (if you desire a touch of sweetness). Then add the dressing to the kale and apples. Enjoy the taste of summer!
